Pieology Custom Pies Head to the Golden Triangle

The slow invasion of custom pizza pie shops around the region continues at a steady pace, with Pieology back on schedule to debut in the Golden Triangle.

Originally promised to be coming soon back in July, the project has returned to hiring mode and is readying for a fall debut at the corner of 12th and Broadway. Located inside the shuttered corner home of stir-fry specialists NuHu Mongolian Express, Pieology already operates in Lakewood and Centennial.

It will join two other fast casual dining options in the long brick building, a Burger Fi outpost and Zeps Epiq Sandwiches, which despite the first impression of being a local, independent store, is a test and concept restaurant for the far more ubiquitous Quizno’s franchise.

In action before many of its rivals, Pieology launched in 2010, dubbing itself a “pie-oneer” and for the moment has the neighborhood to itself. Customers customize their 11.5-inch pizza, choosing the crust, sauce and toppings followed by a five-minute bake in the 800 degree oven.

Also on the menu, pre-designed pizza options, including the Easy Cheesy, Rustic Veggie, or Smokin’ Buffalo Chicken, plus salads, Ooey Gooey cheese bread and a cinnamon churro pizza dessert.
