Sage Restaurant Group has something special in mind for The Elizabeth Hotel set to open in downtown Fort Collins this fall and pushing beyond the standard hotel chain food-and-beverage experience.
Now hiring, Sage will operate three venues on the property from the ground floor up to the roof at the corner of Walnut Street and Mountain Avenue.
First up, The Magic Rat, still under construction just off the reception desk, will feature a musiccentric focus with live performances and a cocktail menu. Early renderings also indicate that some of the 164 guest rooms will feature vinyl record players.
The Emporium Kitchen & Wine Market will double as a breakfast, lunch and dinner brasserie, plus a retail store stocked with wines, cheeses, charcuterie and prepared items like sandwiches to go.
On the rooftop, the Sunset Lounge takes advantage of views across Fort Collins. Self-described as “elegant, glamorous, and showcasing chic cocktails,” the beverage menu will place extra emphasis on its wine collection.
An exact opening day has yet to be announced. Among Sage Restaurant Group’s Colorado portfolio, the team already operates Urban Farmer Steakhouse, Pint Brothers and The Corner Office Restaurant & Martini Bar.
