In the next few months, Denver’s Union Station neighborhood will add Citizen Rail to its growing roster of restaurants. Set on the corner of 16th and Wewatta,inside the newest Kimpton Hotel, part of the same building that will house Tavernetta, Citizen Rail will draw diners in with a showcase dry-aging room and a centerpiece wood-fired grill.
Executive chef Christian Graves is leading the culinary charge and his commitment when building his menu is to employing different wood fired cooking methods including smoking, grilling, and searing in cast iron to bring dishes to life. Before accepting this position, Graves cooked in San Diego where he served as executive chef at JSix. Graves worked under chef Mark Franz for five years at Farallon, and, prior to that, cooked at several top San Francisco restaurants, including Momos, Aqua, Roti and One Market.
In a modern rustic space, Citizen Rail will seat over 150 guests, including: 12 at the chef’s counter, more than 50 bar and high-top seats, and 36 patio spots,
When it opens this summer, the restaurant will offer dinner service seven days a week. Breakfast, brunch, lunch will be added at a later time.
