Previously a truck parked at Finn’s Manor – serving up meats cooked over a hardwood fire and sides made from scratch – Owlbear Barbecue has signed a lease for a solo location at 2826 Larimer Street, reports 303 Magazine.
When asked last year if there would ever be a brick and mortar, Owner Karl Fallenius said: "I sure hope so, but I don't know when and I don't know where. Right now, I'm just starting to think about how."
Focused on a no-shortcuts style of barbecue cooking, the processes behind the plates are extremely labor intensive, however, Fallenius is committed to the the craft, and it’s paid off, as Owlbear has been called "Denver's best barbecue."
The new restaurant, keeping the same name, will serve up a smoking list of old favorites and new creations, including the pulled pork, spare ribs, pastrami special, double smoked barbecued bacon and Texas-style brisket, all made from sustainable raised meat with all the fixings.
The new space is set between The Usual Barbershop and Our Mutual Friend Brewing Co. At 2,000- square feet the location is expected to seat 20, with additional picnic table seating outside. Owlbear plans to be open from 11 a.m. until they run out of meat.
Before Owlbear, Fallenius, a Telluride native, worked in Texas at joints such as Blue Ox Barbecue and Franklin Barbecue – at one point cooking up 120 briskets a day.
