Next month, LoHi born ProsperOats will open a new location of its breakfast/lunch café in Broomfield's Arista development, on the main street. The neighborhood spot that already has a following at its original location in Denver will offer customizable oatmeal, yogurt and açai bowls, as well as local coffee, tea, and snacks to go. The store will be located at 8001 Arista Place in Suite 125.
"We are thrilled to be expanding our brand by joining the great Arista community!" said owner and founder Jenna Berrios. "Our first location in LoHi in Denver has proven to be a desirable and successful niche in the local breakfast scene and Arista offers everything we’ve been looking for in a location for our second store," she added.
Later in the year, the development will also welcome Hickory & Ash, a wood-fired centric project from restaurateur Kevin Taylor who is collaborating with his son Ryan on the 5,000 square foot venture.
