Lon Symensma's Concourse Opens in Stapleton

Symensma's first departure from Asian offerings, leans toward New American style

Looking back to move forward, Concourse – named for the Stapleton neighborhood's previous life as a travel hub – will officially open for business Wednesday, May 3 in Stapleton at 10195 E. 29th Drive, next to Cattivella, Next Door, and upcoming Los Chingones and Hash Tag.

Late last year, Symensma, chef and owner at ChoLon Modern Asian Bistro and Cho77, announced his next venture and tapped an old friend, chef Luke Bergman to head up the kitchen.

With a subtle of a travel theme, elements of the interior include a curved wood ceiling, runway-like light fixtures, a wraparound bar, and luminous tile work, creating a warm but rich and flowing setting. The sophisticated decor and intimate architecture, courtesy of LIVStudio, lends itself to a feeling of living inside a moving art installation. Guests can relax in the sprawling 3,000 square feet of space, seating roughly 100 guests inside and another 70 on one of two patios.

The restaurant is open morning, noon and night. Symensma and Bergman collaborated to compose a menu, showcasing all things local – with fresh produce, wild forages and organic, pasture-raised meats from their favorite farms around Colorado.
