A month and a half into Scraps’ first season on the FYI Network, chef and host Joel Gamoran set his sights on Denver food waste, and he’s bringing the restaurateur behind Biju’s Little Curry Shop along for the ride.

Each episode of Scraps follows Gamoran as he visits a different U.S. city and partners with a local chef or restaurant owner to create a meal using food that would otherwise be tossed out. According to a press release, Gamoran and Thomas visited a number of local farmers’ markets for ingredients to incorporate into this week’s dish.

“It’s common for people to throw out food items such as banana peels, shrimp shells and chicken bones when cooking,” Thomas said. “What many people don’t realize is that you can actually use those ingredients to create some delicious meals. I’m really looking forward to showing viewers how wonderful Denver is and to share my knowledge of cooking with food scraps in order to advance this unique cooking movement.”

Since Thomas opened the original shop at 1441 26th Street in 2014, he has grown the brand to three more locations across Colorado and earned critical acclaim for his fast-casual take on southern Indian cuisine.

The episode will air Sunday, June 18 at 8:30 p.m. MST.
