Chef and restaurateur Troy Guard is unveiling the third Los Chingones today, bringing his popular modern Mexican cuisine to Stapleton. Like the first two locations in RiNo and the Denver Tech Center, the new Los Chingones at 10155 E. 29th Drive features bright colors and plenty of natural light, in addition to a 66-seat rooftop, 50-seat patio and space for outdoor games.
The menu at the new Los Chingones looks familiar, as well. Old favorites like the pig nachos and tamal with braised pork are offered alongside a creative selection of tacos. The Stapleton Los Chingones boasts a few exclusive dishes too, including chicken wings in chili sauce and a seven-layer dip delicately served in a mason jar.
Los Chingones is the latest in a string of high-profile restaurants to open in Stapleton’s Eastbridge Town Center this year, joining Concourse, Cattivella and Next Door.
And Troy Guard is not done with the neighborhood just yet. He is set to open new breakfast place, HashTag, on July 7.
Los Chingones is open Monday through Thursday, 4 p.m. to 9:30 p.m.; Friday and Saturday, 3 p.m. to 10:30 p.m.; and Sunday, 3 to 9 p.m.
