The Dairy Block is coming to life, as the buzz of activity within the new multi-use development will bring an eclectic mix of retailers, along with Huckleberry Roasters and Seven Grand, a new-to-Colorado whiskey bar. Scheduled to open in scattered fashion throughout the second half of 2017, the new tenants within the space will join Kachina Southwestern Grill and Poka Lola Social Club inside the new Maven, Sage Hospitality’s new independent hotel.
Developed by McWHINNEY, Sage Hospitality and Grand American Inc., the 66,000-square foot adaptive reuse development of the old Windsor Dairy in the heart of LoDo is in-part inspired by Seattle’s Pike Place Market. A vibrant pedestrian alleyway will cut through the block bounded by 18th, 19th, Wazzee and Blake streets will be lined with bars, eateries, storefronts and the hotel’s event space.
The first Colorado outpost of, Seven Grand, the popular whiskey bar will pour a comprehensive selection of premium whiskeys and craft cocktails, accompanied by entertainment, such as live music and pool tables.
Huckleberry Roasters, will expand upon its original location in the Sunnyside neighborhood that began as a side project in a garage between two friends. Masterful technique, complex flavors and a pure dedication to good coffee set the scene for what’s to come from the local coffee connoisseurs.
Along with the new beverage purveyors, The Perfect Petal, the popular Highland Square flower shop will settle in with a second LoDo location inside the Dairy Block Lobby. Roost, a modern retail space conceived of by the founder of the Denver Flea will feature a collection of local makers and brands.
Other announcements from the Dairy Block team have indicated a pizza restaurant will be among other yet-to-be-named concepts in the space. Additional office tenants include the Denver headquarters for McWHINNEY, industrial real estate firm ProLogis, the national headquarters for Italian fast-casual chain Romano’s Macaroni Grill, the downtown Denver office of Equus Software and Cuvee, a luxury lifestyle and travel company.
