Situated in a spacious corner of Bradburn Village – Westminster’s mixed-use, pedestrian-friendly development – 5280 Burger Bar will open its second location at the start of August. With nearly 60,000 cars commuting on 120th Street each day, founder and co-owner Clay McPhail decided to double down on the simple all-American burger joint and adjoining 5280 Ice Cream concept.
The neighborhood, surrounded by residential areas on the north and south, includes a Whole Foods, 24 Hour Fitness and comparable eateries, such as Five Guys and Larkburger. Resembling the flagship 16 Street Mall location in the Denver Pavillions – which opened in 2014 – the second burger bar aims to provide a family friendly locals’ hangout to the suburban, north Denver neighborhood.
Planks of cumara Brazilian hardwood are suspended above the 4,300-square-foot space at 4301 Main Street that will seat 110 guests scattered around tables, booths and high-top banquettes. Hickory accent walls and a brick bar open up to two garage-style windows and a 24-seat patio.
Executive Chef Derek Baril – formerly of Boulder-based restaurants Wild Standard and Salt – brings his background to the approachable burgers, salads and appetizers, sourcing fresh, local ingredients and making the buns, ketchup and American cheese is made in-house. Signature dishes include the Perfect Burger, with bacon-habanero jam, roasted garlic aioli, Gruyere cheese and pickled onions, and the Vaquero Burger with chimichurri, guacamole, mango habanero salsa and queso fresco.
Ice cream will be available through a welcoming service window for walk-up customers, and the sweet treat will be churned on-site at the original 5280 Burger Bar’s Pavilions location, serving 16 flavors daily, as well as shakes, sundaes and boozy “shaketinis.”
