Get the dollar bills ready and be prepared for a line of happy fellow customers. The spirit of the late Debbie Kuehn has not been forgotten and her niece Alexis McLean is on schedule to re-open the Santa Fe Cookie Co. next month.
McLean will relaunch inside the same lower-level corner spot at the Republic Plaza. Created by the affectionately named “cookie lady” Debbie Kuehn, the owner and baker passed away in July. Her bold business model operated a three-cookies-for-a-dollar honor system, letting customers pick up a bag and drop the cash into a counter-top jug.
An opening date of Monday, Oct. 2, will be followed by a grand opening, slated for Oct. 19, featuring free coffee, new cookie flavors and the first monthly special from Kuehn’s cookbook. Listed opening hours keep to the former 10 a.m. to 3 p.m. schedule.
Among the original flavors, peanut butter, oatmeal raisin, almond crisp, pecan praline and the “Space Chip.” McLean revealed to the Denver Post that the new era will include a menu that will include scones, coffee cake and coffee.
