Living the dream of every enterprising food truck operator, Joe Knoblich upgraded from mobile vendor, to bricks-and-mortar owner. Now he preps to debut his second Chuey Fu’s at 2950 S. Broadway in Englewood, five miles to the south of his Lincoln Park base.
Updating the loyal fans he dubs the FU Nation, Knoblich is aiming for a "sometime in October" launch and recently jumped the hurdle of acquiring a liquor license.
Chuey Fu’s takes over the corner, 2,464-square-foot former home of Bufa Mexican Grill, featuring two patios, three glass garage doors and existing kitchen equipment.
Still operating his very successful truck, Knoblich debuted his first Latin-Asian fusion concept at 1131 Santa Fe Drive last year in June.
The menu features tacos, giant burritos and rice bowls, appetizers such as ceviche and quesadillas, edamame and sweet potato fries as sides, plus ramen, Korean beef salad and a chipotle miso soup.
