12 @ Madison’s Former Chef Launches a Pop-Up Dinner Series

Ashley McBrady’s first event is coming October 26 to Port Side

Less than two months after leaving her post at top Denver restaurant 12 @ Madison, chef Ashley McBrady will start a new pop-up called Siesta Supper Club. The first event of the series takes place Thursday, October 26 at Port Side in RiNo.

For the Halloween-timed, luau-themed dinner, McBrady will make an all-vegan menu of roasted beet and avocado poke, kalua jackfruit, teriyaki tofu, and steamed mushroom dumplings. She’ll bake pineapple upside-down cake for dessert and offer tiki cocktails. The meal is a la carte, and diners can walk in between 6:30 and 9 p.m., no tickets or reservations required.

McBrady is partnering with Port Side chef Chris Bell for the event; the two previously worked together at Potager before going in separate cooking directions. Bell’s coffee shop and eatery closes at 5 p.m. weekdays, just in time for the supper club to take over.

Interested luau-goers can see the menu below or on Instagram, while those who want a more formal meal can find McBrady cooking at LoHi’s Truffle Table on October 28 for a five-course Spanish wine dinner. McBrady says she’ll likely hold a few Siesta events before the new year, when she hopes to land in a permanent restaurant kitchen. Until then, “It’s really important for me to stay on top of my game,” she added.
