Chefs Daniel Asher and Biju Thomas are the latest to sign onto Denver’s forthcoming food hall, Broadway Market. Asher and business partner Josh Dinar will open Mother Tongue, while Thomas intends to spin out a third Biju’s Little Curry Shop.
The former will feature a condensed menu of five or six dishes, including doner kebab, falafel, and frites, at least to start.
“I want Mother Tongue to be a dialogue about global cuisine,” Asher said, anticipating a frequently changing menu. “We’re starting with this Turkish approach, but maybe next we’ll explore Korean barbecue or a knishery.”
Mother Tongue will be situated next to Pizzeria Coperta, by chef Paul Reilly of Beast + Bottle and Coperta restaurants.
Under the same roof, Thomas will open an outpost of his familiar Curry Shop. The menu will consist of items like tikka masala, a vegan saag paneer, spicy goat curry, and seasonal curries like roasted root veggie with spring greens.
From Eclectic Collective — the same developer that brought Stanley Marketplace — the 15,000-square-foot space that formerly contained Tony’s Market will feature a central bar, community seating, eight local eateries, and two to three retail shops.
The project has yet to announce an opening date.
