In the midst of a string of restaurant openings and overhauls, Denver restaurateur Lon Symensma has quickly swapped out one of his concepts for another on South Broadway. This week Borracho Tacos took the place of Cho77 at 42 South Broadway. The closed Asian street food stop will reopen downtown next to Symensma’s flagship restaurant ChoLon this winter.
Borracho got its start at Avanti F&B in the spring, bringing creative and classic tacos to the LoHi food hall, including a spit-roasted al pastor. Now chef Kevin Chu has expanded that six-taco menu for the brick-and-mortar spot, with items like gorditas, tamales, quesadillas, and rotisserie chicken, 5280 reports. Dishes are accompanied by a tequila-heavy new cocktail list. Back at Avanti, the Borracho Tacos stall will stay open through spring for customers on the other side of Denver.
Along with Borracho’s growth, Symensma’s whole restaurant group is undergoing a sizable expansion. Downtown, his 8-year-old ChoLon was just revamped ahead of an anniversary, while next door, his new restaurant LeRoux is under construction and expected to open around the holidays along with Cho77. That means a trio of Symensma’s restaurants taking up corner SugarCube real estate at 16th and Blake Streets, plus this growing taco empire from LoHi to South Broadway.
