Part diner, part sports bar, Tom’s Urban Kitchen & Brewery officially opened this week at the Westin Hotel at Denver International Airport, partnering with Tivoli Brewing in the space. Originally announced in 2016, this is the fifth Tom’s Urban, with other locations in hotels and casinos from Los Angeles to Connecticut, Las Vegas to Portland.
This DIA edition is the first Tom’s Urban to add an on-site brewing operation into the mix, collaborating with Tivoli’s near 160 years of Denver history. Tom’s offers a Tivoli-exclusive airport brew, with several other recipes anticipated. The eatery’s casual dining options include burgers, wings, and pizza, which customers can enjoy from seats with views of surrounding TV screens.
Tom’s Urban launched in 2012 by the co-founders of Smashburger and is now owned by Denver investment and operating company, Black Shamrock Partners. The original concept was designed as a 24/7 operation, housed on the northeast corner of Larimer Square; it closed earlier this year. In August, The Colorado Sun reported a revived lawsuit and alleged federal criminal investigation into claims of bribery and bid rigging involved in the Tom’s airport project.
