Eleven Madison Park, with three Michelin stars and a current position of No. 1 on the The World’s 50 Best Restaurants list, is coming to Aspen for a months-long pop-up next winter.
This mountain pop-up, running from December 2018 to March 2019, will be called EMP Winter House. It’s an extension of the restaurant’s EMP Summer House that debuted last June and will return this summer to the Hamptons. If it all sounds super fancy, that’s because it is. The pop-up is a business collaboration between Eleven Madison Park co-owners Daniel Humm (its chef) and Will Guidara, together with American Express. To get a reservation over the summer, diners have to book with an Amex card, or take their chances walking in and paying with cash. That’s the bad news. While customers at the NYC restaurant can expect to drop $315 on a tasting menu, the good news is that pop-up diners in East Hampton can order a la carte.
No word yet on the exact Aspen location, pricing, and format, but Humm hinted on Instagram that he’d be looking to his “Swiss roots for menu inspiration.” At the team’s current NoMad Bar pop-up in Manhattan, Humm serves a three-course, $55 fondue menu with Swiss written all over it. That menu includes a chicken consommé, winter greens salad, pretzels, charcuterie, and fondue with crusty bread and marble potatoes. For dessert: tarte tatin and a traditional sweetened coffee with plum schnapps and whipped cream, called a shümli pflümli.
