Denver chef Frank Bonanno has outdone himself with his latest project, a market and food hall set to open in May in the downtown Dairy Block. Milk Market will feature 16 different food and drink options starting with morning coffee and pastries and ending with late-night pizza slices. Fans of Bonanno Concepts (see Mizuna, Bones, Green Russell, Salt & Grinder, and more) will recognize hot chicken, bao buns, cured meats, and other foods drawn from previous or current restaurants. Here are the different stalls, broken down by their primary menu item.
BEER: Stranded Pilgrim will have an all-Colorado list of beers on-draft, including micro brews from smaller breweries.
FISH: Albina by the Sea is a seafood stall and market, with sit-down preparations of meals and fresh fish to take away for dinner.
BURGERS: Ruth’s Butchery will sell Colorado-raised meats for customers to take with them.
SALAD: The Green Huntsman will sell the requisite salad bowl in various mixtures.
CHARCUTERIE: S&G Salumeria is a nod to Bonanno’s Highland lunch counter, Salt & Grinder, and will sell cured meats and cheeses.
PASTA: Mano Pasteria will make noodles for dining in or home preparation.
PIZZA: Bonanno Brothers Pizzeria will make pies in a New York style — hand-tossed, thin, and foldable.
POKE: MoPoke will serve raw fish and rice bowls.
CREPES: Fem is named for the three ingredients in crepes: flour, eggs, and milk.
GELATO: Cornicello will serve the Italian variation on ice cream.
BAO BUNS: Bao Chica Bao refers to the Chinese steamed buns, stuffed with meat and already popular at Bonanno’s Bones restaurant in Governors Park.
COCKTAILS: Moo Bar is a nod to the building’s former life as a dairy, and it’s also the main bar of the room, selling cocktails.
MORE PIZZA: Engine Room is a walk-up window along the Dairy Block’s alleyway, serving late-night slices.
WINE: Cellar acts like its name and allows drinkers at Milk Market to purchase a bottle and take it to their tables.
COFFEE: Morning Jones will serve coffee and pastries to-go.
HOT CHICKEN: Lou’s Hot and Naked just refers to chicken preparations and Bonanno’s former Nashville tribute restaurant Lou’s Food Bar, which closed last year in Sunnyside.
