Mythology Distillery and its Watering Hole Bar are set to open by June in the developing Barrel Lofts complex at 3622 Tejon Street. The LoHi location will distill vodka, gin, and whiskey in a shiny Vendome Copper still. Chasing a dream sparked by an Alaskan heli-skiing trip, Scott Yeates and fellow founders joined with distiller Scott Coburn, a former production head at High West Distillery, to bring the idea to life.
Watering Hole’s drinks menu will feature varying takes on international cocktails along with wine and a rotation of three beers from a local brewery each month. The team also is working on partnerships with local chefs to develop a food menu that will incorporate spent grains into dishes.
Sliding glass doors and an outdoor patio should open up the space during the spring and summer. When it’s colder, guests can sit at the bar to witness the production process centered around a copper still. Once the Mythology team settles, they hope to introduce tours and cocktail-making classes.
