South Denver suburbs will soon have their own Shake Shack, just off C-470 in Highlands Ranch. A second Colorado location of the popular burger chain that opened in RiNo last month is now under construction at Lucent Boulevard and Plaza Drive, in the new Central Park development. It is slated to open by summer, while another Shake Shack is supposed to open later this year or early next at Denver International Airport.
Though construction in Highlands Ranch is not far along yet, a sign in the window at 1509 Park Central Drive shows that Shake Shack has requested a liquor license for the spot, with a hearing scheduled for May 1. Shake Shack sells beer and wine in addition to its ShackBurgers, crinkle-cut fries, and ice cream concretes. This newest Colorado Shake Shack also will have an outdoor patio. At the RiNo location, a 30-person patio is dog-friendly, with a peanut butter and dog biscuit custard on its menu.
The New York-based burger shop isn’t the only big name coming to the Central Park development. Next door to it, Torchy’s Tacos is under construction, with a liquor license hearing set for May 29. A few doors down, The Kitchen’s Next Door is also applying for a liquor license; the hearing is scheduled for May 1. These new food concepts will join others that have already opened there or are under construction, such as Zoe’s Kitchen, Old Chicago, and Rock Bottom Restaurant & Brewery.
