With the opening of Owlbear Barbecue still delayed on Larimer Street, fans of pitmaster and chef Karl Fallenius can find his food temporarily at the kitchen of neighboring Bar Fausto. Starting this week, Fallenius is streamlining Fausto’s food menu and adding a few smoked dishes to the lineup. Bar Fausto’s last chef, Nick Mozealous, has moved to the mountains for another cooking gig.
“We both sort of had an itch to scratch,” bar owner Koan Goedman says of the new collaboration. “This gives Fausto a fun thing to do with a brand that people really like.”
On the bar’s updated menu are dishes such as smoked four-cheese macaroni, beef short ribs braised in pomodoro, and a dip quadfecta of spinach, crab, artichoke, and cheeses. Diners and drinkers could also see more smoked meats and oysters and weekly changing salads, along with Fausto’s Italian shared plates and bruschetta. The bar isn’t equipped for a full-on smoked meats operation, but “we basically want Karl to just have fun with it,” Goedman said. Fear not, there also will always be Fernet soft serve.
Fallenius plans to cook at Bar Fausto tentatively through the summer or until Owlbear opens its brick-and-mortar location at 2826 Larimer Street.
