Highlands Ranch tacos

Texas-based Torchy’s Tacos opens its sixth Colorado store June 26 in the Highlands Ranch Central Park development. The taco shop at 1515 Park Central Drive Suite 100 will offer all the Torchy’s staples — the Democrat beef barbacoa taco, the Trailer Park fried chicken with green chile queso taco — as well as beer and margaritas. Torchy’s will start serving there at 10 a.m. weekdays and 8 a.m. weekends.

Lone Tree sushi

Denver-based Sushi-Rama opens its third location July 9 in Lone Tree. This newest conveyor-belt sushi spot will be similar in style to its RiNo and Tech Center counterparts, with a retro-modern design and rolling dishes such as rolls, tempura, and chicken katsu. Food and drinks will be served during lunch and dinner Monday through Saturday. The last Sushi-Rama opening was in March at Belleview Station.

Broadway huaraches

Englewood’s cult-favorite Conoco station restaurant, Garibaldi Mexican Bistro, will open a second location soon in the Golden Triangle. Garibaldi will take over the former Quijote’s space at 1043 North Broadway sometime in July, Westword reports. Named for a plaza in Mexico City, Garibaldi specializes in chilaquiles, huaraches, tacos, and Oaxacan tlayudas. It will open Monday through Saturday for lunch, dinner, and late-night service.
