Fans can get a taste of The Source Hotel’s upcoming restaurant, Safta, on Tuesday, June 12. Chef Alon Shaya will be in town ahead of his restaurant opening later this summer. From 6 to 9 p.m. at The Source marketplace, he’ll host a Safta pop-up and also sign cookbooks.
For the event, Shaya is preparing different types of hummus and pita bread from a mobile wood-burning oven. His Safta restaurant will feature more Israeli and Middle Eastern cuisine, with dishes such as harissa roasted chicken and octopus with shawarma. Tickets to Tuesday’s preview party cost $50 and include a signed copy of Shaya: An Odyssey of Food, My Journey Back to Israel.
Safta’s opening at The Source Hotel is slated for sometime in July. It will debut along with the hotel’s marketplace and Smōk restaurant, a barbecue spot by Denver chef Bill Espiricueta. New Belgium Brewing also will have a 10-barrel brewhouse there and barrel-age its beers on the hotel’s top floor alongside a beer garden, full bar, and restaurant. Oh, and there’s a rooftop pool with views of the mountains.
