Denver chef Justin Brunson is behind this latest addition to the much anticipated Broadway Market, slated to open later this month. His new fried chicken shop will be the first standalone outpost of Royal Rooster, which began as a pop-up at Brunson’s flagship restaurant Old Major.
Featured menu items will mirror what Brunson and his team have served during lunch and now dinner at Old Major, including fried chicken sandwiches with hot sauce, honey, and thyme, and a changing selection of sides (see pork fat fries). Royal Rooster marks the second addition of one of Brunson’s concepts to a local food hall. Culture Meat and Cheese currently operates out of the Denver Central Market.
Royal Rooster will live between Biju’s Little Curry Shop and Mondo Mini at Broadway Market. Other eateries confirmed for the upcoming food hall include Pizzeria Coperta and Maria Empanada. Though originally expected to open on February 15, the food hall’s debut has been pushed back a week to February 22.
