Chef Kelly Whitaker, who has The Wolf’s Tailor in Sunnyside and Dry Storage in Boulder, opened two new restaurants in Dairy Block near Coors Field.
The new Free Market inside Dairy Block features nine retailers, including Whitaker’s coffee counter called BØH, for back-of-house, already serving Devoción coffee from Colombia, and, eventually, Brutø, a counter-service lunch and dinner restaurant where he expects to make breads, a flatbread of the day, and whole-grain dishes in a Stefano Ferrara pizza oven from Naples. The space includes a raw bar with oysters and other seafood, as well as grains that are milled at Free Market or Dry Storage.
Whitaker owns the liquor license at Free Market, where he plans to roll out a cart filled with bubbles and snacks.
BØH serves toasts and pastries from chef Jeb Breakell as well as soft-serve ice cream. A full bar there features beers, ciders, and sake.
