Visitors can find shareable plates, cocktails, a lineup of wines, and local beers at the lounge from restaurateur Bart DeLorenzo, who calls Cherish “an interactive, extravagant journey you won’t find anywhere else in Denver, where inventive cocktails and shareable plates are prepared near the guests.”
A “Spirits Master” dispenses liquors from their own specially designed distiller station that includes house-blended whiskeys and bourbons, also available for purchase. Flights are a specialty here.
A seasonally changing menu features shared dishes such as flatbreads, mini baked brie en croute, prosciutto-wrapped stuffed dates, stuffed puff pastry, and beet risotto with trumpet mushrooms. Lighter snacks include black truffle popcorn, flavored and spiced nuts, and assorted Spanish olives.
The space features leather furnishings in burnt orange, oxblood, and saddle, antique mirrors, and walnut wood, along with aged brushed brass and recycled bourbon barrel slats outfitting the lounge. Exposed limestone rock and walnut millwork pieces adorn the walls and ceiling, and a lighted white quartz bar with hand-painted art lines one wall. The seating areas feature Persian rugs and accent lighting as well as one area with a fire pit.
