Huevos Tacos, South Broadway’s newest all-day spot for hearty tacos and colorful cocktails, opens Thursday in Denver’s Rosedale neighborhood.
Owner Zach Stock and head of operations Cherish Devereaux designed their new restaurant to maintain the neighborhood feel of Morning Collective while appealing to a broader audience. Open seven days a week, Huevos Tacos offers take-out and delivery. The airy location includes a natural wood, steel, and brick interior and an outdoor patio with bright colors splashed throughout.
The joint serves more than just tacos — from Benedicts and house-made tots to horchata lattes and herbal margaritas — but the focus here is on the house-seasoned tortillas.
Diners will find the Basic (egg and cheese for breakfast, ground beef for lunch and dinner) as well as tacos stuffed with short ribs, pulled pork, brisket, ham, chorizo, and veggie, all accompanied with eggs. Breakfast totchos with a fried egg; Benedicts with ham, coffee-braised short rib , or ghost steak with ghost pepper Hollandaise; and adventurous tacos such as the Rocky Mountain Oyster, hoisin steak, and achiote chicken make the menu. For dessert, churro doughnuts.
Huevos Tacos chose its name as a nod to its all-day breakfast menu, but the double entendre is just a happy accident.
Morning Collective, the breakfast restaurant from chef/partner Joseph Strelnik closed after two years in early April.
