Popular Asian Bistro to Open Second Location in Stapleton

New American restaurant Concourse will shutter on Sunday, September 22, to make way for a second location of popular spot ChoLon Modern Asian Bistro.

”While it is bittersweet to close Concourse, we listened to our customers and the neighborhood and realized the desire, not only for an Asian concept in Stapleton, but for more access to our flagship restaurant ChoLon” shared partner Christopher Davis-Massey.

Concourse opened in May 2017 showcasing all things local – with fresh produce, wild forages and organic, pasture-raised meats from their favorite farms around Colorado.

ChoLon Modern Asian Bistro comes from chef Lon Symensma, who once served as executive chef at fancy Asian food mainstay Buddakan in New York City. He now creates memorable dishes in Denver inspired by similar flavors and ingredients. The soup dumplings with sweet onion and Gruyere are the staple there. For lunch, the Korean hot fried chicken sliders are a treat.

Executive chef Becca Henry (with ChoLon for seven years) and new addition Michelle Xiao (a dim sum chef from New York) will head the kitchen in Stapleton.
