<p id="jomR0n">Welcome to the Eater 38, a seasonally updated guide to restaurants that represent the growth and ingenuity of Denver’s culinary community. Since its launch in 2012, this map has traced the city’s evolution from what many outsiders dismissed as a cowtown to an ever-growing, prismatic dining destination that has earned a place in the national conversation for its youthful energy and freewheeling creativity. </p>
<p id="1D8isG">Any given update, then, is designed to reflect what’s defining and redefining the scene now. Spanning a variety of cuisine types, price points, and neighborhoods, it centers on the cornerstones of the landscape — hence the word “essential” — while highlighting more recent arrivals that are extending Denver’s horizons. The fact that it can’t include every place fitting those descriptions is the nature of the beast; removal from the Eater 38 doesn’t mean that a restaurant isn’t still important and won’t return in the future. </p>
<p id="hktii8">Note, too, that while the map — which is organized geographically from north to south — may include the occasional Boulder establishment as well as food trucks and pop-ups with fixed addresses, it does not include mobile or pop-up vendors (so here’s a shoutout to stars in that category like <a href="https://mukjafoodtruck.square.site/">Mukja</a> and <a href="https://www.instagram.com/littlearthurshoagies/">Little Arthur’s Hoagies</a>). <p>Top tips for fueling up before takeoff </p> <p class="p--has-dropcap p-large-text" id="JEhHB2">Between the art installations that have launched <a href="https://www.uncovercolorado.com/denver-airport-art-meaning/">1,000 conspiracy theories</a>, the al fresco leisure activities out on <a href="https://www.flydenver.com/events">DEN Plaza</a>, and that ringtone-worthy <a href="http://www.cpr.org/news/story/love-dia-make-your-phone-sound-like-the-terminal-train">train jingle</a>, the Denver International Airport (DIA) is more entertaining than your average travel hub — and that’s no less true of its dining options, both present and upcoming. The former are covered at length below, terminal by terminal, and here’s a quick rundown of what’s opening in the future: </p>

<p id="ilXJG9">DIA’s commitment to local operators is admirable. This fall, Concourse B will become home to a branch of homegrown hit <a href="https://rosenbergsbagels.com/">Rosenberg’s Bagels & Delicatessen</a>, while 2024 will see the opening of a slew of Denver favorites: Look for modern taco joint <a href="https://misterosodenver.com/">Mister Oso</a>, Italian kitchen <a href="https://www.bardoughdenver.com/">Bar Dough</a>, upscale Asian spot <a href="https://www.cholon.com/downtown/">ChoLon</a>, and gourmet market <a href="https://marczykfinefoods.com/deli">Marczyk Fine Foods</a> in Concourse C as well as contemporary American kitchen <a href="https://denver.eater.com/venue/37443/the-bindery">The Bindery</a>, hip ramen shop <a href="https://denver.eater.com/venue/972/uncle">Uncle</a>, and <a href="https://denver.eater.com/venue/10814/maria-empanada">Maria Empanada</a> in Concourse A. And though details remain TBD, the Big Red F restaurant group will eventually be adding its enduringly popular concepts <a href="https://www.jaxfishhouse.com/">Jax Fish House & Oyster Bar</a> and <a href="https://www.postchickenandbeer.com/">The Post Chicken & Beer</a> to the mix.</p>

<p>Whether established or emerging, these breweries are defining the craft beer scene</p> <p id="YL6G5I">Of the 440-plus breweries in the state of Colorado (the <a href="https://www.brewersassociation.org/statistics-and-data/state-craft-beer-stats/?state=CO">sixth-highest number</a> in the country as of 2022), more than one-quarter are located in the Denver area. While that makes for a lot of taps to visit, this map is designed to help intrepid beer drinkers get cracking, covering both the cornerstones of the scene and exciting newcomers that are contributing to its evolution while representing a range of styles, vibes, and neighborhoods.</p>
<p id="XYzyGA">Because there’s so much to explore within metro boundaries, what follows — organized geographically from north to south — does not include the many noteworthy contenders based in Boulder County and beyond. <p>Top tips for fueling up before takeoff </p> <p class="p--has-dropcap p-large-text" id="JEhHB2">Between the art installations that have launched <a href="https://www.uncovercolorado.com/denver-airport-art-meaning/">1,000 conspiracy theories</a>, the al fresco leisure activities out on <a href="https://www.flydenver.com/events">DEN Plaza</a>, and that ringtone-worthy <a href="http://www.cpr.org/news/story/love-dia-make-your-phone-sound-like-the-terminal-train">train jingle</a>, the Denver International Airport is more entertaining than your average travel hub — and that’s no less true of its dining options, both present and upcoming. The former are covered at length below, terminal by terminal, and here’s a quick rundown of what’s opening in the future: </p>

<p id="ilXJG9">Later this year, Concourse B will become home to Portland, Oregon’s <a href="https://www.voodoodoughnut.com/">Voodoo Doughnut</a> and a branch of homegrown hit <a href="https://rosenbergsbagels.com/">Rosenberg’s Bagels & Delicatessen</a>, while contemporary Union Station destination <a href="https://www.mercantiledenver.com/">Mercantile Dining & Provision</a> will get a sibling in Concourse A. Come 2023, Concourse C will see outposts of a number of Denver favorites, including modern taco joint <a href="https://misterosodenver.com/">Mister Oso</a>, Italian kitchen <a href="https://www.bardoughdenver.com/">Bar Dough</a>, upscale Asian spot <a href="https://www.cholon.com/downtown/">ChoLon</a>, and gourmet market <a href="https://marczykfinefoods.com/deli">Marczyk Fine Foods</a>. And though details remain TBD, the Big Red F restaurant group will eventually be adding its enduringly popular concepts <a href="https://www.jaxfishhouse.com/">Jax Fish House & Oyster Bar</a> and <a href="https://www.postchickenandbeer.com/">The Post Chicken & Beer</a> to the mix.</p>

<p>From deli fare to prix fixe feasts, these restaurants deliver</p> <p id="tHu6K1">It wasn’t so long ago that Americans equated Italian food with red sauce — understandably, since the majority of the country’s immigrants to the U.S. came from the south, merging their traditions with those of their new homeland to create the meat- and tomato-laden dishes that defined the category stateside for nearly a century. But times have changed, and we now understand that Italy’s regional cuisines differ as greatly as those on our own shores; what’s more, just as they do here or anywhere, they evolve. </p>

<p>Where to go to soak up the city’s famous sunshine</p> <p id="ElAqhx">Denver’s not nearly as wintry as outsiders tend to assume — especially not this year, in which the city <a href="https://denver.cbslocal.com/2021/12/10/denver-weather-denver-did-tie-the-all-time-no-snow-streak-after-all/">tied its 134-year record</a> for consecutive days without snowfall — but it isn’t Miami either, so offering outdoor service year-round takes some effort. </p>
<p id="IbX6K6">Granted, that effort was aided by pandemic-era restrictions on dining-room capacity, which forced many restaurant and bar operators to invest in alternative seating options. So while many patios are weather-dependent throughout the season, many are now expressly built to withstand the cold. In some cases, that simply means they’re bedecked with propane heaters and fire pits for intrepid outdoorsy types to gather round; in others, it means there are tents, greenhouses, bungalows, yurts and other indoor-outdoor structures in place that may require reservations and even advance payment. TLDR: Call ahead to ensure that table in the sunshine is available. </p>
